Menu Plan Monday

I will be trying to make up as many of the meals as possible ahead of time. I use several shortcuts when cooking. If I a great sale on ground beef, I will go ahead & brown the beef and freeze it in small portion, so it is much quicker to prepare ground beef meals. I try to do the same with chicken. I cook up a batch, shred the chicken and freeze for use later.


Monday - Oven Fried Chicken, Sour Cream & Chives Scalloped Potatoes, Green Beans, Biscuits (we skipped the fried chicken last week, so we are going to make it this week)
Vegetarian Menu - to be decided

Tuesday - Chicken Enchiladas, Salad
Vegetarian Menu - Bean Burritos, Salad

Wednesday - Chicken Fettuccine, Steamed Broccoli, Garlic Bread
Vegetarian Menu - Shrimp Fettuccine, Steamed Broccoli, Garlic Bread

Thursday - Hot Wings, Homemade Jalapeno Poppers, Chili Cheese Fries (this is for boys night, as they will be doing some work on the house & want JUNK food)
Vegetarian Menu - Veggie Burgers, french fries, jalapeno poppers

Friday - Lasagna, Garlic Bread, Salad
Vegetarian Menu - Veggie Lasagna, Garlic Bread, Salad

Saturday - Pan Fried Steak, Twice Baked Potatoes, Steamed Veggies, Rolls
Vegetarian Menu - Salmon, Twice Baked Potatoes, Steamed Veggies, Rolls

Sunday - Chinese Night - Sweet and Sour Chicken, Fried Rice, Egg Drop Soup, Sweet and Sour Soup
Veggie Menu - Sweet and Sour Shrimp, Fried Rice, Egg Drop Soup
